Where’s the Beef?

First of all, no, I’m not a vegetarian. But JustAwesome is (ok, pescatarian) and so, this is now one of my favorite, quickie meals. I know that most vegetarians don’t want to eat meat, or things that taste or look like meat, but JA hasn’t really had much meat in her life. She isn’t trying to remember or avoid its flavor. To her, this “beef” is just a differently flavored protein. With an unfortunate name. To me, it is yummy.

“Beef” and broccoli. Onions. Add more things, or don’t. Red pepper? Carrot? Garlic? Ginger? Make with kale instead of broccoli? Whatever I get in the box that I want to use up. I like this wrapped in lettuce with korean red sauce. The whole meal ends up running me about 5 Weight Watcher’s POINTS. Which means, you know, more wine.

I’m not suggesting this meal for meat-eaters, just old school vegetarians, but you never know... Truth is, JA is out tonight and I’m on my own. I could’ve had real beef. Didn’t.


  1. I like this post and will definitely try next Trader Joe's visit! I actually 'popped by' to see if you had any ideas for what to do with this Kale I suddenly find myself in possession of... there was no insert in the box this week and what's a girl to do with so much kale?

  2. My favorite veggie in the box! I look forward to the kale. We usually saute it with garlic — remove the stems and cut into smallish pieces. Easier to eat.

    Or you can try roasting it. Mmmm. Kale chips.


    Or you can stir fry. Or put in lunch muffins. Or make a soup. Good luck, Kara. I was wondering how you were doing with the box. If it was fun or stressful...

    Speaking of box stress, here's what I got): 3 red beets, 1 rutabaga, celery, red kale, rosemary, zucchini, sweet potatoes, and HALF A MEYER LEMON. Among other fruits and lettuce. What do I do with that? And half a meyer lemon??

  4. What kind of cockamamie share is that, Stef? When you're given a half lemon, you should make a half lemonade.

    You can eat the peels. That's what our favorite mixologist says.
